Ingredients:
1/2 cup sooji/ semolina
2 cup whole wheat flour
1/4 cup hot pure ghee
1 cup mint leaves, finely chopped
1 tsp jeera
1 tsp carrom seeds (Ajwain)
1/4 tsp Turmeric powder
1 tsp red chilli powder
1 tbsp oil
Salt to taste
Oil for deep frying
Method:
1. Take one mixing bowl. Combine flour, sooji, mint leaves, salt, red chilli flakes, turmeric powder, jeera, Ajwain and hot ghee and start mixing with fingers to crumble them well.
2. Gradually, add water and start kneading the dough. The dough should be like poori dough. Do not add too much at a time as we need firm dough. It should be soft.
3. Cover and rest the dough for 30-40 min.
4. Heat oil in a deep pan.
5. Once the dough is ready, divide into equal balls. Take one ball and roll out into a circle with a slight thickness.
6. Now, Cut the rolled circle into diamond shapes with the help of a knife as shown in the picture

7. Fry all the Namakpara till golden brown and crispy at low to medium flame.
8. Don't over fry them or don't fry them on very high flame heat as it will burn and turn to black.
9. Drain out the namakpara and put onto absorbent paper. Repeat the same process with the rest of the balls.
10. Cool them completely and store them in an airtight container.
11. serve with this namkeen with coffee or tea. It is kids friendly snacks.
