Ingredients:
- Rice flour: 1 cup
- Water: 2 cups
- Green chillies: 2-3, finely chopped
- Cumin seeds: 1 teaspoon
- Carom seeds (ajwain): 1/2 teaspoon
- Salt: 1 teaspoon (or to taste)
- Baking soda(papad Kharo): A pinch (optional, for softness)
- Peanut oil: 1 tablespoon
- Sesame oil or ghee: For serving (optional)
- Pickle masala: For garnish (optional)
Instructions:
Prepare the Water Base:
- In a medium saucepan, bring 2 cups of water to a boil.
- Add cumin seeds, carom seeds, green chilies, and salt to the water.
- Stir in 1 tablespoon of peanut oil to enhance flavour.
Cook the Rice Flour:
- Lower the heat to medium and slowly add the 1 cup of rice flour, stirring continuously with a wooden spoon to avoid lumps.
- Once all the rice flour is incorporated, reduce the heat to low and cover the pan.
- Cook for 3-4 minutes, stirring occasionally, until the mixture thickens and starts to come together into a soft dough.
Optional Additions:
- Add a pinch of baking soda if you'd like a slightly fluffier texture.
Shape and Serve:
- Remove the pan from heat and let the khichu cool slightly.
- Wet your hands with a little water or oil. Scoop portions of the dough and shape them into small balls, or serve them as is.
Garnishing:
- Drizzle sesame oil or ghee on top.
- Sprinkle with pickle masala for an authentic touch.
Serving Suggestions:
Serve warm as a snack with additional ghee or sesame oil on the side for dipping. Khichu is best enjoyed fresh and hot!
