ઊંધિયા માટેના મુઠીયા - Undhiya Mate na Muthiya - How to make muthiya for Unthiyu - A Gujarati mixed vegetable one-pot casserole dish that is the hallmark of Gujarati cuisine. Perfectly prepared combination of vegetables and fenugreek dumplings cooked in an aromatic blend of spices. A dish which certainly earned the prime importance in all Gujarati`s functions and gatherings. I love to relish it with family on festive season always.

Ingrdients:
1 cup besan /gram flour
1 tsp sugar
2-3 tbsp oil and also for deep frying
salt to taste
1 tsp lemon juice
1 tsp turmaric powder
1 tbsp chilli powder
1 tbsp coriander powder
1/4 cup chopped coriander
hand full of fenugreek leaves
Method:
1. Take a bowl and add besan/ gram flour in it.
2. Now chopped fenugreek leaves and coriander then thoroughly wash with water so all dirt went out.
3. Add the fenugreek leaves and coriander leaves in a bowl.
4. Add oil and moist the flour Then add all spices one by one like turmeric powder, salt, sugar, lemon juice, coriander powder, chilli powder and mix well.
5. It is formed like a dough if not then add a few drops of water.
6. Now grease the palm and make it the small size of a ball from the dough.
7. Heat oil in Kadai and deep fry these Muthiya until crispy on medium flame otherwise it is raw from inside.
8. Now You can store this muthiya in fridge and use it for making undhiyu.
