1 chopped Potato
1 Big chopped onion
2 chopped tomatoes
1-inch ginger
4-5 garlic cloves
1/2 cup milk
1.5 cup Basmati Rice
2 tbsp Bombay Biryani Masala
2 tsp chilli powder
1 tsp turmeric powder
1.5 tsp coriander powder
1/2 tsp garam masala
1/2 cup fried onions
1 Cardomom
1 cinnamon stick
1 tsp cumin seed
1-star anise
1bay leaf
1 Dry red Chilly
1 green chilly
2 cloves
2 cups of mix vegetable(cauliflower, peas, carrot, Bringle(optional), broccoli)
Few strains Kesar
Few curry leaves
Pinch of Hing
salt to taste
Aluminium foil
Pre-Preparation
- Take 1/2 cup warm milk and add a few strains of Kesar and mix it well till becomes light yellow.
- Make paste of ginger garlic
Method:
1. Take rice rinse with water and wash it well. Now Heat a pan add water in it and cook the rice 80%.
2. Now strain it and keep aside. Meanwhile Ready the Masala for biryani.
3. Turn on the gas stove heat a pan and add 5 tbsp oil in it. Now add all dry Masala like Cumin seed, cardamom, cinnamon stick, star anise, red dry chilly, bay leaf, curry leaves and ginger-garlic paste cook it.
4. Now add chopped onion and fry it till soft at this point add salt so onions get cooks faster. Now add slit green chilly and tomatoes in it. cook it till oils separate out.
5. Now add Chilli powder, turmeric powder, coriander powder, Biryani masala and Garam Masala in it.
6. Now add the mixed vegetable and cook it till it becomes soft by covering the lid.
7. Once all done then turn off the flame. In the big Kadai Now do the layering with this cooked sabzi and rice.
8. First of all, put sabzi then layered with rice. Now spread Kesar Milk on top of rice and fried onion then again layered as sone previously. Now spread half glass of water all over the rice layer
9. Now Cover this Kadai top All over with the 2-3 layer of Aluminium foil So that Biryani can steam perfectly.
10. Now Cook this biryani on low flame about a half an hour and it is ready to serve. You can also add raisins and cashew in it. It is optional.
11. Enjoy this spicy and delicious biryani with Raita.
