Thai Red Curry Paste |
Ingredients:
8 to 9 dry red chillies
1/4 bowl finely chopped onion
3 tablespoons garlic chopped
1 tablespoon lemon zest
1 tablespoon white turmeric chopped
1 tablespoon coriander with stems
1 tablespoon lemon juice
1/4 teaspoon white pepper
Salt to taste
Tips:
- You can increase or decrease the amount of chillies as per your taste.
Method:
1. First, drain the seeds of red chilli and soak it in water, when the chilli is fairly bloated, drain it from the water. It has to be completely dry from the water, otherwise, it comes into eye when crushing it with the help of mortar and pestle.
2. Be careful during this process that your hands should cover with gloves otherwise you feel little bit burning due to bruised chillies.
3. Now for this, we can create red curry paste using the mortar and pestle. If you wish, you can also make it in the mixer but making it in such a desi way makes it taste great.
4. To make Thai Red Curry Paste, we will crush it all ingredients one by one.
5. For this first, add the soaked red chillies and salt into a mortar and crush it using the pestle. After that chilli paste is done to add white pepper to it and grind it.
6. Then add the lemon zest inside it. To make the lemon zest, take one lemon and grate its skin that know as lemon zest.
7. Then add a piece of chopped white turmeric inside it and crush it. Now add finely chopped onion to it and crush it. Once all of this is done, add lemon juice to it and crush it.
8. Now your red curry paste is ready. You can also use it as a dip.
